Yes, keep the roots, dense roots good, snip the plastic pot down one side, remove. Dont mess with the roots, those are gooooooood roots

Looks like crassula ovata gollum. I wouldn’t worry about losing some of the roots, succulents are usually pretty hardy at growing them back. Just don’t water it for a couple of days after you pot it up again, that gives the root damage time to callous over.
Also I reckon you’ll find mostly just roots in the pot too. I’d guess its turning yellow because of nutrient deficiency after using all the soil.
