LOL! Love that measuring spoon! I absolutely love beets in any form. My mother has a cast iron corn shaped pan that she always made her cornbread in. I was always fascinated by that pan,lol! Grew up in Tennessee so this meal was a staple in our home. Thanks for making me hungry, Kaye! Stay warm.

Years ago we had an ice storm and were without power for 8 days. We were some of the "lucky ones". Others were without power for over 2 weeks. Since then, I've learned to can my own meat. I tried homemade corned beef hash for the first time in my 70's using my own canned corned beef. It was fantastic! After I had gotten married I asked my grandmother how she made Polish Pierogi. She NEVER used a recipe – I can hardly cook without one! So she decided to start making them. When she started on the flour I asked her how much flour she was putting in. She gave me a funny look, shrugged her shoulders and replied "As much as will fit!" I've got to plant more Okra this year. Unfortunately, planting Okra is like planting Nasturtiums for me. I tend to eat it raw as I'm picking it. I will have to try your okra recipe. I, also, hate heavily breaded and deep-fried okra. Wish I really was there joining you for dinner! I haven't made pickled beets in almost 40 years. Will have to do that this year. We are getting A LOT of snow now. I think the last frost killed my Rosemary. I planted a pot of chives in the greenhouse. My granddaughter is the same way. Every time I talk to her on the phone she is at Walmart getting groceries!! Had to go through and watch this video a 2nd time – totally enjoyable!
Hey there dear kaye, oh my goodness, its evening here now, think i watched a film very early this morning before day light.,now its 6pm.i have to say im so pleased that it will soon be my evening meal time,because you hsve just made me so hungry. When I heard you say you had tomato juice the only thing I could think of was… will Kaye make herself a Bloody Mary? My mother would stand at the kitchen sink, salt shaker in hand and she’d eat a tomato much the way an apple is eaten. I knew when growing up that if I saw a bag of celery in our frig that soon my mother would make a Bloody Mary in a tall clear glass with that celery stick sticking out! ❤
What I started doing about a year ago, and love, is dehydrating already cooked soups, stews and beans, then vacuum seal in Mason jars. I'm always making huge amounts of these, lol. So, when I need a quick meal, I just put the amount I'll eat, add water needed for correct consistency and heat up in a pot. I don't have freezer space to freeze things, this way the jars can be stored anywhere. 😊
