The leaves seem okay and it is even putting out some new ones, but the plant won't stand up straight it just droops like this. What am I doing wrong? I have been watering at least once a week and she sits near a north facing window with lots of indirect sunlight.

I’ve found my syngoniums prefer to stay very much on the dry side and if watered too much they start to droop just like this, I only water mine when they’re bone dry

Mine only do this when they’re thirsty

In addition to the other watering comments, I would suggest getting some support like a trellis or coir pole. Syngoniums can stand upright for a time but do eventually appreciate some help growing upright

She could use a little more soil for support on the stems at the bottom
