I’ve looked up so much online and watched videos but I can’t seem to get a direct answer on this.
I left the country for a few weeks and had a house sitter but completely forgot to tell them to water the plants. I came back to them completely wilted over. I watered them and propped them up and after about 24hrs, they’re back standing tall on their own. Plant gets little to moderate sunlight, but that never seemed to hinder growth. It’s been a joy watching it grow every week before I left.
Should I cut the 3 yellow leaves? Or with some time, will those restore as well? If I do cut them, where is it best to cut? Closest to stem?

Once a leaf turns yellow, it can not be saved. This is for any plant. You can cut it off for appearance, or you can wait till it falls off naturally.
I’ve never seen a damaged/dying leaf recover. You just have to let it go and try to prevent whatever caused it in the undamaged/newer leaves.
Wait till it gets droopy and a little soggy and it will pull right off the stem.
Cut it but it’s sooooo pretty draw it if you can!

Don’t remove the older yellowing leaves until they are crispy dry. Your plant is recycling the nitrous from the chlorophyll and the other nutrients as well, making it lose its green color and exposing the yellow pigments of the leaves (that’s why the leaves turn yellow), to redistribute it to the new leaf and/or root growth points. So yeah, once they go yellow, there’s no coming back for them.
By not removing those leaves, you won’t have to fertilize the soil too often, so less risks of over fertilizing and burning your plants’ roots. Plants are excellent recycling machines that evolved to optimize all their nutrients, so they can survive longer in case of a nutrients deficiency in the soil by shedding their older leaves.

They can’t come back. Let them fall off instead of picking them; your plant is using them.
Try to figure out why they’re turning yellow. Might be normal, or it might be a sign of trouble.
