  1. You need to get a slip strop and strop it afterwards to polish the edges. Otherwise, you’ll get bits of metal in yo ur food and the edge will dull way faster. I also don’t think you should use sandpaper on such an expensive knife. You should get a dedicated sharpener, but if you can’t, at least get the highest grit sandpaper you can 500-900.
