Note on peeling peppers: the USDA  recommends peeling peppers before canning for two reasons. The first is texture. Large peppers can have thicker skin, which can turn rubbery when canned. The second is the possibility of contamination from pesticides or other unwanted materials on the skin of the pepper. I am Canning homegrown organic peppers and have thoroughly washed my peppers. For this reason, I have decided not to peel the skins. However, I add this disclaimer so you can make whatever choice you were most comfortable with for your pantry.
