Filipino Munggo, often referred to as Ginisang Munggo, which is a traditional Filipino dish made primarily from mung beans (also known as munggo). This dish is a comforting and nutritious staple in Filipino cuisine, often enjoyed as a hearty stew or soup. There are many variations of this and we like to add bittermelon fruit and leaves to ours.

Wow you really have power to taste bittermelon, i need to knead them with salt and rinse with water before cook
Never tried with coconut milk… Looks yummy
Ingredients I used:
– 1 bitter gourd, cut into slices as shown + salt water for soaking
– salt to taste
– 1/2 tsp turmeric
– 2 to 3 tsp red chilli powder (I use a lot to balance out the bitterness, but you can customize as preferred)
– 1 tsp coriander powder
– 1/2 tsp cumin powder
– 1/2 tsp garam masala
– 1 tbsp cornflour
– 2 tbsp besan
– few tbsp oil for frying
Procedure:
– Cut karela into thin slices as shown and soak in salt water for 15-20 mins.
– Drain away the water and add all the masalas to the chopped karela pieces. Coat them well.
– Add corn flour and besan, coat it well too.
– Fry them in little oil, flipping them over once they’re cooked halfway through.
I love snacking on them as is or as a side to dal rice. Enjoy!
2 large onions sliced
2 ripe tomato cubed
2-3 dry red or green chillies adjust to taste
1 large clove of garlic chopped
2 tsp of oil
INSTRUCTIONS
Heat the oil and add the sliced onions. Fry until light golden brown and soft. Add the red chillies, garlic, and hing and fry for a while longer until the garlic doesn't smell raw anymore.
Add the chopped tomato and salt. Mix well and cook until the tomatoes turn soft and the mixture is moist. Remove from the stove and set aside to cool.
Grind without adding water to a smooth paste.

Im from south India Tamizhnaadu…we make loads of dishes from bitter gourd, we say it Pavakkai n its my one of the fav veggie.
