I love my zinnias, and my garden is very similar to yours, Rachel. There's some ground cherries that are still going, but we are also going into the thirties this week. Maybe not a true frost, but we MIGHT, and I'm trying to get things in, like you. But those zinnias, oh, gorgeous. Are they California giants? That's what mine are, those and the Queeny Lime series. My paternal grandmother from the ozarks always made “picilli “with no cabbage. We search for years for that recipe and I finally found it in a1945 Kerr canning book. It’s made with end of year garden leftovers and is delicious on a bowl of beans!

I’m a new subscriber to your channel. I had my first garden since moving to north Idaho 19 years ago. I’m getting an electric canner this week and hopefully I will be able to save my green tomatoes. I have Cherokee Purple and Big Boys which turned out to be little fellas.

I am making balls, green tomato salsa Verde as I watch. I went back and looked at your video from 4 years ago, and I cringed a bit and all the work you were doing. I use a little coring tool for tomato stems and put them through the dicer, and then same with the onions at a smaller dice. Could even use the food processor that attaches to your mixer that you used for cowboy candy. I put my jalapeños in a food processor and I was done in a snap! I grew all my tomatoes just to make the salsa because I won’t have a garden next year. I just want to thank you so much for all your videos! That’s where I get most of my inspiration! And the reason I went out and bought that attachment for my mixer, talk about quick work! Appreciate you guys so much!!

Thought I was done canning tomatoes. Then I found two more bags in the freezer and added what was ripe in the garden to make juice for my daughter.

Thank you. We will wrap the green tomatoes in newspaper, into a box and under the bed. Check every Saturday morning. We have given ripe garden tomatoes for Christmas presents. In the south, Ripe Tomato Catchup is like a relish. Deep south is Chow-Chow, it is the relish with corn.
I am still harvesting. Will be glad to take a rest from gardening. I have come to treasure buying my seeds by November and resting til March. Then I’m interested again….

I went to blocks and got some paste tomatoes for salsa. My garden tomatoes I made into brasheta and sauce. The cherries I canned with a jalapeno, garlic clove , cilantro and lime juice , covered in hot water. I blend before serving, it’s like the restaurant salsa.
I've made a green tomato condiment spread it was tangy and sweet. I've only had a few on my remaining plants this fall and roast with vegetables. I quarter or half them so they stay semi-firm.
My mother made green tomato relish. It was good. It was like a chunky salsa, had a pickle taste to it like bread and butter pickles

You need to try pickled green tomatoes. Quarter the tomatoes & Use the same brine as kosher dill pickles. Vinegar, pickling spice , salt, water, garlic,
and fresh dill. Stuff your jars w/tomatoes, garlic& dill. Warm everything else. Pour it into the jars and for a couple of days keep them in a dark place then refrigerate them. They'll be ready in a weeks time. They are so crisp & delicious.
Hey Rachel, Last year I started a bunch of tomatoes plum and slicers in real late June. Real close to the first frost I picked 27 pounds of green tomatoes and cooked them and used the immersion blender put this into the 8 qt enameled cast iron and cooked them down then with the curry and spices. Filled quart jars and pressure canned these. By the time I was done I had 12 quarts. Now I open the jar pour it into the pot add the coconut milk and add vegetables and meat and all done ready to eat. As easy as jar of spaghetti sauce. I wanted 12 so we could make it once a month as my wife really likes it with chicken and pork. I do all the cooking here.

I didn't even grow tomatoes and I got 10 pints of tomato sauce, 10 pints of pasta sauce, 10 half pints salsa, 10 half pints green tomato salsa and make 7 quarts bloody mary mix! My neighbor just kept bringing me his cherry tomatoes, jelly bean tomatoes and plum tomatoes! 😅😂😅 okay, thanks for the tomatoes 🍅 😉 and got another big bowl of cherry tomatoes today that will be sauce..
I've pulled up the whole plant of green maters & hung them upside down & had fresh tomatoes after Thanksgiving.
I also have made green tomato relish & I have a very very old recipe for green tomato jam that's fabulous

I picked green beans last night and peppers its 36 here in mid michigan this am . My tomatoes have been done a week or two now .I have made green tomato chutney in the past its reall good it also has green apples in it.😊

I have the same issue. Back in August I had all these canning ideas but then I went carnivore a month ago and my care to can has decreased significantly. I also have two bed of carrots that I'm not too sure what to do with. 😂😂
Since you like cabbage and peppers, a good green tomato recipe is Chow Chow relish. I made that and salsa verde with my green tomatoes this year. I ended up with enough half pints of relish and pints of salsa to get me through the year for sure. Thanks for sharing all you do!
My favorite recipes for green tomatoes are the green tomato curry, green tomato preserves and green tomato marmalade. I dehydrate them, too, to add to anything that needs a little sweet/sour kick.

Last year my son-in-law gave me a recipe to make spicy green tomato pickles for him. He loved them. I hope he saved the recipe because I didn't. They weren't something I'd ever make for myself. I tried the green tomato "apple" pie last year too. What a waste of valuable time. Homemade crust and all! It was awful. It did not taste like apple pie. I have a lot of red tomatoes yet (I'm in Iowa). I keep bringing them in and preserving in one way or another. I love putting them in the freezer and dealing with them later but my granddaughter is raising chickens and I need room in my freezer for some we will buy from her.
Rachel, I totally agree with you on stewarding what we have been blessed with. I have been wondering, and this is the perfect video to ask; have you ever tried to preserve/freeze (prep for) fried green tomatoes??? They are delicious and I would really like to learn how to best store them. I have seen them in the freezer section at the grocery stores. I am so appreciative of your willingness to always share in your experiences. You are a BLESSING!
I just tried making mock jam with my green tomatoes after finding your video on it. My kids love it. Will make that again. Going to try ketchup with the red tomatoes but unable to find the seasoning mix local so looking for a good recipe
