These are a good pest diversion crop to grow alongside other plants that get munched on by rabbits and such.
Most burrowing critters will ignore other favorite crops like carrots, pumpkins and potatoes if these are growing nearby.
The tubers are quite tasty! Taste like cross between an apple and raw potatoes, or jicama, if you know what that is.
I grow mostly pollenless varieties. Sunchokes are cool but I couldnt sell many when I grew them

Good but also be careful if its your first time eating them. Start off with a small portion as it can give you belly ache and lots of gas 😂 learnt that the hard way
